❤ Red Pepper Pesto Stuffed Chicken ❤

Tonights post-gym dinner was a new creation and was extra yummy! I made my own homemade red pepper pesto which is divine and I used it in my newly created chicken dish which I made for my dinner. Here, is how to make the pesto and also, how I used it for the chicken.

❤Homemade Red Pepper Pesto ❤

🔹Add some chopped red pepper to a blender and purée until smooth.
🔹Next add a small sprinkle of grated parmesan and some parsley. (You could also use chopped basil)
🔹Then, add one clove of crushed garlic to the blender.
🔹Finally, add a few tablespoons of olive oil and a small spoonful of balsamic vinegar until it is all well mixed.

💚🍗 Stuffed Chicken Breast with Cottage Cheese, Mushrooms and Red Pepper Pesto 🍗💚

🔸Saute some sliced mushrooms in a small saucepan with a little drizzle of olive oil.
🔸Slice a large chicken breast down the middle and flatten it out slightly.
🔸Next, spread some cottage cheese along one side of the chicken breast and on top, add a spoonful of the homemade pesto.
🔸Then, add the mushrooms on top, fold over the top of the chicken breast and cook in the oven for around 35 mins @ 180°C.
🔸And serve! I had mine with some sweet potato and sauteed onions.

Although this picture doesn’t really do it much justice, it is a fab chicken dish which is pretty easy to make! It is amazing how some meals are healthy but taste too good to be!
